2022 Vin Noe La Chateniere 'La Sauvage', Saint-Aubin Blanc Premier Cru, France Thomas Farge The Nero d'Avola was fermented100% chardonnay. From a 0. 2ha parcel just above the cellar. Parcel is southwest facing and sees shallow, fine, loamy red clay soils on limestone. Average vine age is 20 years, planted by Jean Jacques Morel after the site was abandoned in the 30s. Fruit sees 2 week carbonic maceration in stainless steel with no juice (dry carbo), then pressed into barrel. Ages for 8 months in single barrique. No added s02.
