Viticulture: Organic (certified), biodynamic methods Vinification: Picked in 2 passes at harvest, gentle pressing, ambient yeast fermentation (16C) in oval cement amphora. Aged 7 to 8 months, light filtration (white earth), no SO2 added until bottling (total SO2 is 30 ppm max).
