• Aged 12 months in 60 gallon French oak barrels (30% new)
but usually comes out fuller-bodied

Yields are very low and the grapes are hand harvested at their maximum ripeness, destemmed and gently pressed. The wine ferments for 15 20 days then ages in concrete tanks and barrels. Zero sulfur added; bottled in June 2025.
